Research Description The project will focus on establishing halal assurance systems for banana chips, catsup and frozen banana. This will be implemented by the DOST-ITDI in cooperation with 5 private companies, DOST 4A, DTI-EMB, DA and DOST-NCR.
Research Objectives GENERAL: to establish halal assurance systems in the processing of selected banana food products for the global market YEAR 1: (1) to standardize the processing method of selected banana food products; (2) to conduct benchmarking on the best practices for banana products; (3) to develop halal assurance manual for selected banana food products; (4) to come up with a directory or list of permissible and nonpermissible raw materials or ingredients for selected banana food products; (5) to examine the physico-chemical, microbiological, sensory, nutritional components and shelf life of the selected banana food products; (6) to determine the acceptability and profitability of the product; and (7) to ensure that the products developed comply with the standards YEAR 2: (1) to develop a halal assurance system manual for selected banana food products in collaboration with project cooperators; (2) to conduct shelf life study of the selected banana food products; (3) to conduct benchmarking on the best practices for selected food products in the ASEAN market; (4) to ensure that the products developed comply with the standards; (5) to conduct training, monitoring and project dissemination of the study; and (6) to assist the cooperators of selected banana product to be halal certified
