Research Description The Project will establish halal assurance systems for pan de sal and loaf bred. This will be implemented by the DOST-ITDI in cooperation with the DOST XI, private bakery school, bakeshops, bakeries, and the Philippine Society of Baking or Federation of Bakers.
Research Objectives GENERAL: to establish halal assurance systems in the processing of bakery products (pan de sal and loaf bread for the global market SPECIFIC: (1) to establish a dedicated processing laboratory area at FPD for prototyping and conducting R&D and develop a dedicated R&D staff on halal science and technology, regulations and standards through training; (2) to benchmark best practices to enhance product development oh halal bakery products; (3) to test methods for inspection or analysis in determining halal compliance of bakery products, to test for the halalness of food ingredients and nonfood materials; (4) to provide halal compliant bakery technologies by conducting halal food develop and test marketing; (5) to prepare an exhaustive list of permissible and non-permissible food an non-food materials; (6) to develop science-based and effective halal-assurance and guidance manual including quality and safety systems for popular bakery products; (7) to identify cooperators for HAS development and testing; and (8) to ensure that products comply with standards by conducting trainings and product testing
